Unwashed eggs have a natural ‘bloom’ coating on them that protects the egg and keeps bacteria out. Unwashed eggs can be left out on the counter for up to two weeks.

Washed eggs however must be refrigerated because the bloom has been washed off and it no longer has that protection. They can be stored in the refrigerator for up to 6 months before they start to lose freshness.
